Easy, delicious gazpacho soup
As we wind down from summer, I like to squeeze in as much of the wonderful produce that is still readily available at our local farmers' markets. This easy soup makes use of ripe beautiful tomatoes, cucumbers, peppers, red onion, and fresh herbs. The only changes I make to this recipe is substituting lime juice for the lemon juice, not adding any sugar, and adding some jalapeño pepper in addition to the green pepper. I also like mine a little chunky so I do use a blender but only pulse a couple of times. You can feel free to blend it until it is smooth rather than chunky if you'd prefer.. It literally takes 15 minutes tops to make it and is served cold. I like to garnish it with some cubes of avocado for some healthy fat. Delicious and healthy!
